This product is an amber oily liquid with a relative density of 1.00±0.05, a viscosity of 0.40～0.60Pa·s (25℃), a flash point of 288℃, and an HLB value of 10.0. It is soluble in mineral oil, corn oil, dioxane, Chemicalbook cellulose, methanol, ethanol, ethyl acetate, aniline and toluene, cottonseed and carbon tetrachloride. It is also soluble in 5% sulfuric acid, sodium hydroxide, sodium sulfate, and aluminum chloride, and is dispersed in water, and ethylene glycol.
It has excellent emulsifying, dispersing, and wetting properties. In the food industry, it is used as an emulsifier, dispersant, and turbidity agent for ice cream, bread, cakes, candies, etc., and for refreshing drinks. The dosage is 0.1%~0.5% to prevent cream food from splashing and aging, and to improve quality, increase gloss, improve taste, and increase softness. In particular, it has a significant anti-blooming effect on cream chocolate toffee sugar. It can be used alone or together with glycerol esters, sucrose esters and other food emulsifiers to exert synergistic effects.
